Easily Kali/Escrima. I mean come on, they teach you how to use sticks, staffs, knives, swords, daggers. The way to disarm a stick can be used to disarm a knife, same principle but executed a little differently.

Type fiore , talhoffer or George Silver into a search engine and check out their books.

These were guys who taught knights and fencers of europe to duel in the old days.

One thing people don’t realise is European masters did a lot more fighting than asian masters.

Oriental countries generally were actually much more peaceful than europe. They had way less wars, and stricter codes of combat when they did.

In europe anyone could take anyone on, any day of the week, for any reason, with any weapon, which is why we won all the wars.We love it.

Krav Maga. It’s taught to Israeli special forces operatives and a lot of it’s moves involve disarming an enemy

Krav Maga. Check out the History Channel’s Human Weapon episode about it. Here is part of it.
